Mechanical effects at high hydrostatic pressure
The presence of high hydrostatic pressure (HHP) leads to a shift in the equilibrium of chemical bond formation of biochemical reactions, phase transition and transport processes. Therefore, HHP processing offers a broad sprectrum of application as novel technique in food science and biotechnology. Current paper in particular illustrates on two examples the influence of mechanical effects on biotechnological and biological transformations during high hydrostatic pressure processing. The first one deals with macroscopic fluid transport processes due to pressure application and their consequences on the uniformity of the obtained process result. The second one considers pressure as a mechanical load on a single yeast cell (Saccharomyces cerevisiae) and illustrates deformation and stresses resulting from this load. A correlation to other investigations reported in literature is found and discussed.
